Live cultures eat the lactose in milk and turn it into lactic acid. The acid thickens the milk and gives yogurt its tang. You need to hold it at the right temperature for the right amount of time.

How long does it take?

Five minutes of prep time. Everything else is waiting. A classic batch sets in 8–10 hours overnight; a long ferment for high probiotics runs 24–36 hours. Then we recommend refrigerating for four hours to firm up.

Does it work with non-dairy milk?
